One of my favourite breakfasts during the cold season is oatmeal. It’s so warm and hearty on a cold winter morning, easy to make and it keeps you feeling full for long. I love to make different variations and lately I have been craving this raspberry version that I created a while ago.
Heat the raspberries and 0,5 dl of the water in a small pot. Bring to a boil then lower the heat and add the rest of the water, rolled oats and maple syrup and let it simmer for 3-4 minutes while stirring together until desired consistence. Decorate with banana, coconut flakes, almonds and chia seeds.
Stripes is all the rage this season and I love the way Olivia Palermo is mixing hers in this look. It’a a fine balance not to look like a clown that has eloped from a circus but she masters it to perfection. A key lesson from her styling must be to keep some of the colors the same so it still looks put together.
I have just received some of my sale buys and boy am I happy with these purchases! A couple of months ago I did this interview with the danish fashion magazine IN and talked about style and shopping. It was a fun day and I got to wear two of my current favourite outfits. You know I love my dresses and this winter I have been paring them with over-the-knee boots. The wide pants are also a favourite of mine this season combined with a knit or a turtleneck and a couple of high heeled boots.
Alaïa Paris is the first perfume by Azzedine Alaïa, the designer behind the iconic dresses, belts and shoes know for it’s intricate laser cut pattern. I picked it up in 10 Corso Como last time I was in Milan and it smells so fabulous. It’s a rather sweets and sexy scent but not too heavy. The description of the fragrance says: The top is a fresh impression with airy notes. The heart is an abstract floral impression with freesia and peony and the base impression is musky notes.
The sales are such a great oportunity for finding luxury goods at a discounted price and to treat youself to a little retail therapy that won’t break the bank. January is the season for the obligatory New Years resolutions that often revolves around eating healthy and working out. Since I find it too cold to take an outdoor run right now I’m doing some extra indoor training at home. Nothing like lots of squats, lounges and sit-ups to tone that body (and booty) after too much Christmas food!
Flødeboller is a Danish specialty that is super delicious. It is a chocolate covered fluffy meringue with a bottom made of marzipan or waffle. The original is dark chocolate and meringue but they can be made with different flavors. I have made the original, one with licorice, which is also a common variation and then my own invention – one with lemon. I have a thing for cakes/desserts with lemon because in my opinion it perfectly balances out all the sweet, heavy stuff that desserts are often made of and gives a fresh taste to it.

The marzipan is rolled to the desired size for the bottoms and cut into 3-5 mm slices. They can be brushed on both sides with melted chocolate if desired and placed to dry in a cold place. (It makes the bottom more stabile, but it’s not necessary for taste.)
Combine water, sugar, glucose and the split vanilla pod in a pot and bring to a boil. Meanwhile whip the egg whites with the 2 tbsp. sugar with a mixer and mix until soft peaks form. When the water and sugar reaches a temperature of 117 degrees it’s carefully and slowly poured into the stiff egg whites while mixing at the same time. Continue to whip for about 8 minutes.
Divide the meringue in thee bowls for the different flavors. One is mixed with 1 tbsp. licorice powder for the licorice variation and the second one is mixed with the zest and juice from the lemon. Pour one meringue mix at a time into a piping bag with a rather large tip. Place it over the marzipan bottoms and squeeze out the meringue into small peaks.
Let the “flødeboller” rest a couple of hours. Place them on a sheet of baking paper or a rack and cover the ones with the original filling with tempered dark chocolate and the licorice and lemon ones with tempered white chocolate and decorate them with licorice powder and glitter (if you don’t have any glitter you could also use lemon zest/sprinkle etc.) I find it easiest to use a spoon and a knife when covering. Just pour a spoonful on the top and spread with the knife.
To temper the chocolate set up a water bath: Rest a metal bowl on a pot with 2-3 cm of water in the bottom. Make sure the bottom of the bowl is at least 2-3 cm above the surface of the water, not resting in the water. Bring the water in your pot to a simmer (do not boil). Chop the chocolate into pieces and melt around 2/3 of your chocolate over it and bring the temperature of the chocolate to 50 degrees. Place the remaining 1/3 of the chocolate in another bowl and pour in around 2/3 of the now melted chocolate and stir together until it has all melted smoothly and the temperature is 30-32 degrees. Keep the remaining of the melted chocolate at 50 degrees for use if the mixture gets too cold and starts to thicken. Then pour in some of the hot chocolate and mix again. The same procedure works for the white chocolate however it needs to be at 28-30 degrees when mixed together and used.
I love new stationery, notebooks and journals! It’s like the adult version of getting new books, paper and pencils when a kid in school. Of course I could use my IPhone but I get a much better overview with a printed journal and I also like the decorative look of a journal as a part of my office interior. Turks and Caicos is a group of small tropical islands in the Caribbean where Providenciales (often called Provo) is the largest of the islands and the place that I stayed when visiting. And this place can be described with one word: Paradise! Simple as that! It’s the sheer sense of calm, the peace and the most beautiful white beaches in the world that sets this place apart.
Turks and Caicos are a favourite among many celebs and still it has not been taken over by tourism as many other places. You can still find your own secluded beach or take a run and not meet anyone except a couple of lizards. But there is still plenty to do. We went catamaran sailing, played tennis, biked around the island and went on a diving excursion. And wherever you go the lush island greenness, the white sandy beaches and the clearest turquoise water will amaze you.
We stayed at the Ocean Club Resort at Grace Bay Beach, which has been named the world’s best beach many times by numerous travel sites. And it truly is – I could just lie on the beach all day, from sunrise to sunset, it’s just so breathtaking and serene.
Ocean Club Resort facilities include a cabana bar & grill, a more sophisticated restaurant, two swimming pools, spa, fitness and tennis along with on-site watersport activities. The interior at the apartments is very island style with wicker furniture and pastel colors. Our beachfront two-bedroom apartment was very spacious and with a nice wide terrace whit access directly on to the beach.

Providenciales airport is reached with flight from Miami and it takes one hour and a half to get there.
What to eat:
Seafood such as conch, lobster, soft-shell crab and fresh fish are the island favorites, along with spicy Jamaican chicken and lots of fresh fruits.
First of all – a happy New Year! I hope you all had a lovely evening! I always find it so exciting starting on a fresh new year with endless opportunities and exciting adventures waiting ahead. As you can see I have decided to go back to blogging again after a much-needed break. I began to miss the blog and felt inspired again which for a while had been lacking after more than 6 years of blogging. So I took some time thinking about what I want to accomplish with the blog and how I want the blog to be. I’m still working on layout etc. but wanted to get things going from the beginning of 2016!
